Funny you should write about this because I have been feeling the same way about getting Jaymin to eat more veggies.  My outlook on it all (and this is just me) is that as long as Jaymin is "eating" something of nutritional value and he is continuing to grow, I do not push him on foods he does not want to eat.  On the other hand, I try not to "serve his needs" meaning...if he doesn't eat what I KNOW he likes then I ignore him not eating...and eventually he'll eat some of the food that I left out for him on his table.  He is a GREAT breakfast eater so lunch he doesn't always eat as much as I would like but he usually makes up for it at dinner.  

My whole outlook as a preemie mom is as long as he's growing and gaining with what you are feeding him then you are doing something right!  My instincts want him to eat more veges too but I feel if you force them to eat it, they may never like it.  Another helpful thing I do is make a plate of whatever we make at dinner for Jaymin and if he doesn't eat much of it....he usually comes to one of our plates later to munch off ours....then I try sneak in some of the veges with the other food...generally works!

Go with your gut feeling.  If he looks curiously at your plate of food, ask him if he wants some and if he takes it...GREAT...but if not, in my OPINION why push it.  He's doing great as is.

Good luck on this issue.  I'll be curious to see what other people have to say because I wished Jaymin ate more veges but I don't want to push him because I want him to continue to eat what he does.
